Lemon Curd

Lemon Curd

Intro:

I usually make lemon curd with my grandma in Brazil — we called it Creme de Limão. Her recipe was a little different, but lemon curd has always been a classic. It’s rich, bright, and tangy, and it pairs perfectly with a warm Goldn Crumble. If you’ve ordered one and want to add a little side magic, this recipe is for you.

Easy Lemon Curd Recipe (6 servings):

● 4 large egg yolks
● ½ cup fresh lemon juice (about 3 lemons)
● 2 tbsp lemon zest
● ½ cup sugar
● 6 tbsp unsalted butter (plant-based for dairy-free), cut into cubes

Instructions:

1. In a heatproof bowl, whisk together yolks, juice, zest, and sugar.
2. Place bowl over a pot of simmering water (double boiler). Stir constantly until mixture thickens (about 10 minutes).
3. Remove from heat, whisk in butter until smooth.
4. Let cool, then store in the fridge.
